Day #2 in a row of cooking (I might set a record 🤣🤣🤣)…brought to you by Pinterest….lemon garlic shrimp zoodles.
For our wedding, my husband and I received a spiralizer which prior to moving, I did not have a chance to use. I was browsing recipes on Pinterest when I came across “lemon garlic shrimp zoodles”…bingo…a use for my spiralizer. I was planning on making it for myself since the hubs is usually gone on Tuesday nights…however I forgot he was going to be home this Tuesday…so he was a lovely recipient of the zoodles. Sounds like a good thing right? Not to him…he hates vegetables. He watched me spiralize 4 zucchini’s and he was cringing the whole time. But guess what?…he ended up liking it; more on that later.

Here is the official recipe and cooking:
- 4 medium sized zucchini (zoodled with spiralizer)
- 1 lb of shrimp (I like fresh)
- 1-2 cloves of garlic (minced or pressed)
- 2 T butter
- 2 T olive oil
- juice of one large lemon
- salt and pepper to taste

Zoodle the zucchini and add it to a frying pan along with a splash of olive oil or butter.

Saute for about 5-7 minutes on medium. It is done when it is still a bit “firm”.

Do not overcook, test as you are cooking.

Set aside. (preferably on paper towels to absorb any excess moisture)

Add the fresh shrimp to another frying pan saute with a little butter on medium until just done.

Set aside.

Add 2 T butter and 2 T olive oil to the pan along with the garlic.

Saute for 1-2 minutes.

Add the shrimp and zoodles back to the pan and squeeze the juice of one lemon over top.

Toss and heat for 1-2 minutes.

Salt and pepper to taste.
I did not follow this recipe to a tee. To me, part of cooking is knowing who you are cooking for and altering recipes appropriately. As previously stated; the hubs doesn’t like vegetables…so my thought was how do I make the dish taste less like zucchini…seasonings. I threw in seasoned salt, rosemary, basil, oregano, and dehydrated onions in addition to the garlic, butter, and olive oil. I also grated up a partial block of Mozzarella cheese that my mom had randomly left at my house and threw that on top at the end. Another secret…I totally forgot to add the lemon…and it was still amazing without it. We ended up eating nearly the whole batch and the hubs loved it…cooking win! You never know what you may like until you try it!
